An outdoor cooking grill exhaust system, while not absolutely necessary, does make the outdoor grilling experience a bit more enjoyable.
If your outdoor grilling is taking place in the wide outdoors, then a grill exhaust is probably not necessary. But if you outdoor grilling is taking place in a partially enclosed are, then an outdoor cooking grill exhaust hood is almost mandatory. Without a grill exhaust, when the grill inevitably begins to smoke, your guests will experience the unpleasant sensory sensations of smoke inhalation.
When installing the cooking grill exhaust, it's extremely important that the wall, ceiling, or surface be fire resistant and capable of withstanding high heat. The grill will occasionally eject burning embers and the last thing you need is for it to spark a fire on nearby surfaces.
If you plan on keeping your grill for a while, you might want to think about getting a spare exhaust fan when you buy your exhaust system. Every few years or so, depending on how often you use your grill, it's a good idea to clean the entire grill exhaust system. If you have the required expertise, you can do it yourself. Otherwise, there are companies that can do this for you. It's normal for a heavily used grill to have grease build up in the exhaust system. You'll want the entire exhaust system inspected and cleaned. This includes the flue throat, blower housing, blower wheels, etc. You'll also want any damaged parts repaired or replaced.
Also, check the flaps and ensure that they are clean and working. The exterior exhaust flap should be clean and in good repair to maintain unobstructed airflow.
Since most cooking grills do not come with exhausts, you'll probably end up buying one separately and possibly installing it yourself as well. The best guide to buying an exhaust is to ask the store from which you purchased the grill and ask for their recommendations.
Once installed, follow the manufacturer's instructions to test it's operation. One simple way to test is to hold up a thread or a light strip of clothing or tissue and see if the exhaust vents pulls the article towards it and holds it there. If it doesn't, then you have either installed the exhaust incorrectly or it doesn't work.
Having a good quality outdoor cooking grill exhaust system is important. It can make your eating out much more enjoyable by reducing the amount of smoke in the air.
